In the bleak midwinter

31 days in January - of course payday has to fall on a Monday, after the last weekend, the bitter end. The fridge door opened to a January landscape, it's emptiness blinding like the bright white sky. I scrounged this supper from the bleak terrain and was rewarded for my resourcefulness. The ingredients: 1 chopped leek sauteed in butter, with a spoonful of dijon, a sprinkling of dill - a chunk of salmon from the freezer, cooked in a pan with salt pepper and lemon juice; salmon added to the leeks, evaporated milk added to the pan where the salmon had cooked and frozen peas were heated, all was added to the salmon along with a generous spoonful of plain yogurt. And spaghetti. Next time I would give it more kick - a teeny bit more dijon, another splash of lemon, slightly more dill and and another dollop of yogurt - but all things considered, it was a Saturday night success.
