Pasta with Mushrooms
2 tbsp butter1 red chilli, seeded and chopped
14 oz sliced mushrooms
3/4 cup vegetable stock
3/4 cup cream
2 tbsp lemon juice
linguine
1/2 cup grated parmesan
1/4 cup chopped basil
cracked black pepper and sea salt
Heat a frying pan over medium heat. Add the butter, chilli, and musrooms, and cook for four minutes or until the mushrooms are brown (longer than four minutes). Add the stock, cream, and lemon juice and simmer for 5 minutes.
While the sauce is simmering, cook the pasta until al dente. Drain. Toss pasta with the mushroom sauce, parmesan, basil, salt and pepper. Serves four.
