Burritos
I don't really have a picture, or a recipe - but I made burritos last night and they were great!
1. Put onions and garlic in your food processor, so you can chop them kinda small. Not pulverized, but nicely chopped! Of course you could do it by hand.
2. Put a bit of oil in a frying pan and add them.
3. I had a mystery pepper, it was mildly hot. I might go with a jalapeno for more kick, or whatever. Some kind of hot pepper, chopped, if you have it. Add.
4. Add some ground beef, and brown it.
5. I added chili powder (probably about at least 2 tbsp), cumin (maybe 1 tsp), coriander (about 1/2 tsp?), cayenne sprinkled, hot pepper flakes, oregano (maybe 1 tsp or so).
5. Add a can, or 3/4 of a can of beans - I had Romano beans in the house. They worked well - or pinto beans would be good too. Once in the pan, kind of smoosh them with a spoon as you're cooking.
6. Add about 1/2 to 3/4 cup of beef broth, and continue smashing the beans and stirring them in - cook it so that it is not liquidy any more - the beans make it a bit thicker.
7. Get your tortillas out and spread generously with re-fried beans - I had specifically "burrito" refried beans with green chilies in them. Add the beef mixture. Grate cheese over it. Wrap it up. Bake it in the oven. Serve with salsa! (I made salsa by chopping up tomatoes, onions, hot pepper, lime juice - something really basic to eat with it and it was really good).
