Cajun Fish Fillets with Steamed Vegetables
2 tbsp light mayonnaises
4 tilapia fillets (or catfish)
1 tbsp minced parsley (I used dried)
1.5 tsp cajun seasoning
1 lemon, cut into wedges
Steamed vegetables:
2 carrots, sliced
1 cup broccoli florets
1 cup sugar snap peas, trimmed
half sweet red pepper, cut into 1/2 inch pieces
Vinaigrette:
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tsp minced fresh basil
3/4 tsp grainy mustard
pinch each salt and pepper
On greased baking sheet (or use non-stick foil), spread mayonnaise over fish; sprinkle with parsley and cajun seasoning. Bake in 450 oven until fish flakes easily when tested, about 12 minutes (I just leave it in 12 minutes).
Vegetables: Meanwhile in steamer basket (I don' t have one - so they just sort of boiled together) steam vegetables until tender-crisp, 4 minutes. Vinaigrette: In bowl, whisk together oil, vinegar, mustard, salt and papper. Add steamed vegetables and toss to coat. Serve with fish and lemon.
This is quite delicious and you can use whatever vegetables you have - the other night I only had carrots and broccoli.
