Sticky Chicken from Allison

Last night I made Sticky Chicken. Not a new recipe, but one I love! Mom's recipe:

1 cup peach jam (a 250 ml jar)
1/2 cup barbecue sauce - whatever
2 tbsp soy sauce
chopped onion - a medium size

It says to heat these ingredients to boiling and then pour over chicken breasts - however many you want - and bake at 350 for an hour. Baste last 1/2 hour, or also can bake at lower temperature for a bit longer.

I always add a tablespoon or so of cornstarch to thicken it a bit as the chicken these days is watery and the whole thing then gets watered down rather than being sticky.

Good served with rice and peas!
