Vegetable Stir-fry
This was sooo delicious! If you don't want to buy Chinese 5-spice powder (McCormick has one, it's pretty available) - if you don't want to buy it just make a little blend of your own. Pinch of cinnamon, pinch of cloves, fennel, star anise - or if you just have two, just add some cinnamon and cloves, hot pepper flakes, black pepper. I served this on some of those egg noodles from the grocery store.
1 tbsp peanut or veg oil
2 long red chiles, seeded and sliced
2 onions, sliced into thin wedges
1/2 tsp Chinese five-spice powder
2 cloves garlic, sliced
200g green beans, trimmed
1 red bell pepper, sliced
2 zucchini (courgettes), sliced
2 cups broccoli florets
200g snow peas, trimmed
2 tbsp oyster sauce
2 tbsp small basil leaves
1/4 cup roasted unsalted cashews
Heat a wok or large frying pan over high heat. Cook the oil, chillies, onions, five-spice and garlic for 2 minutes. Add the beans, capsicum, zucchini, broccoli and snow peas and stir-fry for 4-5 minutes or until tender. Toss through the oyster sauce. Sprinkle with the basil and cashews. Makes 4 servings.
