Orange Sesame Spinach Salad


I didn't have snow peas, cucumbers, or radicchio - but without it, it was still fantastic. I left the sesame seeds out of the dressing, and instead toasted them and tossed them with the salad. 

can of mandarin oranges, drained (or an orange, segmented)
2 chicken breasts
4 cups packed baby spinach leaves
2 cups torn radicchio leaves
3 green onions, thinly sliced
*1 cup blanched snow peas
*1/2 cucumber, sliced
1/3 cup toasted almonds
toasted sesame seeds


1/4 cup vegetable oil
2 tbsp rice vinegar (failing that, apple cider, or cider vinegar, or white wine vinegar)
1 tbsp sesame oil
2 tsp soy sauce
1/2 tsp Dijon, or dried mustard
1 pinch granulated sugar
1 pinch pepper

Heat skillet. Toast almonds, shaking the pan once in a while, until lightly golden. Add to salad bowl. Add sesame seeds, toast the same way, and add to salad bowl. Cook chicken in the same pan - I seasoned with salt and pepper and cut into slices, with some vegetable oil. 

In salad bowl add sliced green onions, spinach, drained mandarin orange segments. Shred or cut up chicken, and toss with dressing.
