Black Bean Quesadillas

- 2 tsp vegetable oil
- 1/2 onion, chopped
- 1 green or red pepper, chopped
- 1 tbsp chili powder
- 1/2 tsp cumin
- salt and pepper
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1/2 cup corn kernels
- tortillas
- cheddar
- sour cream (optional)

Cook onion, pepper, chili powder and cumin about 8 minutes. Add beans, salsa and corn, cook for about five minutes. Assemble quesedillas - put bean mixture and cheese on tortilla, fold into half moon. Bake at 400 for a few minutes, then broil for a few minutes, enough for the cheese to melt and the tortillas to be toasty. Serve with sour cream.
