Squash hummus
I'm not much of a hummus/hummous person but this version looked intriguing. It was actually quite delicious and makes a great lunch (with a salad perhaps!). Also from the Jamie Oliver cookbook.
Roast a whole butternut squash (not a real big one) by cutting it in half, drizzling with olive oil, and placing cut side up on a roasting pan on 350 for about 1 to 1.5 hours. Seed, scoop out the flesh and put it in a bowl.
Toast 1 heaping tablespoon of raw sesame seeds in a hot dry saucepan until golden. Mince 1 garlic clove, with a small red chile (if you have one, or - chile flakes). If you would like, add some cilantro, chopped. Add all this and the squash to the pan of sesame seeds. Pour a 14oz can of chickpeas (liquid and all), into the pan. At this point I poured all of this into the blender. Add the juice of half a lemon and the equivalent amount of olive oil until you have the consistency you like. Serve it with warmed or toasted pita bread.
