Mocha-Coconut Black Bean Brownies
1 can black
beans (19 oz), rinsed and drained
2 oz
semi-sweet chocolate, melted
4 eggs
¾ C
granulated sugar
½ C cocoa
powder
1/3 C
vegetable oil
¼ C shredded
coconut
2 tsp
instant coffee
1 ½ tsp
vanilla extract
1 tsp baking
powder
1/8 tsp salt
Put all ingredients into a food processor and blend until
combined. Pour into a greased 9 x 13 pan. Sprinkle with additional coconut for
garnish (I didn't)
. Bake at 350° for 15-20 minutes, or until inserted toothpick comes out
clean. Cut into squares while still warm. Best served cold, the next day (or
even 2 days later)
