Spanish Rice

Melt in frying pan: 1/4 cup butter
Add: 1/3 cup chopped onions
1/3 cup chopped green peppers
1/4 cup diced celery
1/2 lb fresh sliced mushrooms
Cook slowly until tender.
Add: 1 20oz can tomatoes
1 tsp salt
1/8 tsp pepper
Simmer uncovered 10 min.
Stir in 2 cups cooked rice.
Cover and simmer 10 minutes.
