Maple Custard Oatmeal
This is from a recent Chatelaine magazine. It's really tasty. The first time I made it I used the three eggs it calls for, but I found it a little too eggy. I made it this morning with two eggs and I thought it was much better. I've never had toasted chopped walnuts with it but I bet that would be really good!
Ingredients:
-3 eggs
-2 1/2 cups milk or water
-1 cup quick oats
-1/4 to 1/3 cup maple syrup
-1 tsp vanilla
-1/8 tsp salt
raspberries
blueberries
toasted chopped walnuts
Directions:
1. Whisk eggs with milk and oats in a medium saucepan and set over medium-low. Cook, stirring occasionally, until very creamy, about 15 minutes. Stir in maple syrup, vanilla and salt.
2. Divide among 4 bowls. Top with fruit and nuts.
