Lemon Pepper Chicken Thighs

This is one of Elaine's recipes.

Ingredients:
- 4lb boneless chicken thighs
- 2/3 cup olive oil
- 2/3 cup lemon juice
- 4 Knox chicken cubes
- 2 cloves garlic
- 3 tbsp dijon mustard
- 2 tbsp parsley
- 1 tsp black pepper

Directions:
Process oil, lemon juice, chicken cubes, garlic, mustard parsley and pepper in a blender until well combined. Place chicken and marinade in plastic bag and refrigerate overnight. Barbecue on top rack over medium/low heat for approximately 8-10 minutes on each side. (I had to cook them for way longer than this).
