Kale and Brussels Sprouts Salad


This is soooooo good. I could eat this every day. I am shocked at how much I like it.

The video is where the recipe comes from - there are no particular measurements, but you can kind of tell what the quantities are by watching it (it's really short). The salad I made has a lot of dressing, and that's good. The only change I made was adding a pinch of sugar, because the dressing seemed a tiny bit bitter.

You'll need sunflower seeds, olive oil, dijon, a shallot, a garlic clove, lemon juice, kale, brussels sprouts, parmesan and an apple (I used pink lady).

Basically season and toast the sunflower seeds in a pan with some olive oil.

Finely chop a shallot, juice half a lemon, a generous spoonful of dijon, salt and pepper, and a garlic clove (minced or grated) (and a pinch of sugar if you think it needs it). Cut up the kale, slice the brussels sprouts finely. Slice the apple finely. Add to the bowl. Whisk olive oil into the dressing, and then toss with the stuff. Add the parmesan and sunflower seeds and mix it through again. Delish!!!
