"The Best" Cauliflower and Broccoli Cheese

 This is another Jamie Oliver recipe, I thought it was delicious.

2 cloves garlic
3.5 tbsp butter
1/3 cup all purpose flour
2 cups 2% milk
1 lb fresh or frozen broccoli
2.5 oz sharp Cheddar cheese
2 lbs fresh or frozen cauliflower, cut into florets
2 slices stale bread (to make breadcrumbs) or some breadcrumbs
2 sprigs fresh thyme (or some not fresh thyme)
1 oz sliced almonds
olive oil

Preheat the oven to 350. Mince the garlic and put into a medium saucepan on medium heat with the butter. When the butter has melted stir in the flour for a minute to make a paste, the gradually add the milk, whisking as you go, until lovely and smooth. Add the broccoli (cut up first) and simmer for around 20 minutes, or until the broccoli is cooked through and starts to break down. then mash, or mix with an immersion blender. Grate in half the Cheddar and season to perfection. *my blender is on the fritz, and I have no immersion blender, so I just mashed the broccoli roughly in the saucepan, there were still some chunks, which I liked. Up to you how smooth you want it to be.

Arrange the cauliflower in an appropriately sized baking dish. Pour over the broccoli white sauce and grate over the remaining cheddar (I gave it a sprinkling of parmesan).

Blitz the bread into bread crumbs in a food processor (or use bread crumbs), then pulse in almonds. Mix in some thyme if you have it. Toss with a lug of oil and a pinch of salt and pepper then scatter evenly over the cauliflower cheese. Bake for 1 hour, or until golden and cooked through.
