Mumbai Glazed Cashews With Black Pepper
This is from Bonnie Stern's Essentials of Home Cooking. It makes a great gift! I forgot to take a picture but brought it to our New Years Eve hosts.
Ingredients
2tbsp/25ml/1oz butter
¼ cup/50ml corn syrup
2tbsp/25ml water
1½ tsp/7ml salt
2tbsp/25 ml ground black pepper
1lb/500g cashews
Method
Preheat oven to 120ºC/250ºF. In a heavy saucepan, combine the butter, corn syrup, water, salt and black pepper and bring to the boil. Stir in the cashews till they are thoroughly coated. Spread them onto a baking sheet and bake for one hour, stirring every 15 minutes, to ensure they do not stick together. Cool and enjoy!
