Turkey Chili Nachos
Really good recipe. I thought the ground turkey was great! I think I used ground turkey thighs, but turkey breasts were an option too. Original: https://www.canadianliving.com/food/appetizers-snacks/recipe/turkey-chili-nachos
2 teaspoons olive oil
1 onion chopped
2 cloves garlic minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon each salt and pepper
pinch cayenne pepper
450 g lean ground turkey
1 1/2 cup bottled strained tomatoes (passata) (used one of those small cans of tomatoes you brought over Mom, I think you know which I mean?)
half sweet red pepper diced
2 green onions sliced
200 g baked tortilla chip (about 8 cups)
1/2 cup shredded part-skim mozzarella cheese
1/4 cup fresh cilantro
2 teaspoons lime juice
In skillet, heat oil over medium heat; cook onion, stirring often, until softened and light golden, about 8 minutes. Stir in garlic, cumin, paprika, salt, pepper and cayenne pepper; cook, stirring, until fragrant, about 30 seconds.
Stir in turkey; cook, breaking up with spoon, until no liquid remains and turkey is no longer pink, about 5 minutes. Stir in strained tomatoes, red pepper and half of the green onions; cook until heated through and thickened, about 5 minutes.
Layer chips and turkey mixture in lightly greased 13- x 9-inch (3L) baking dish; sprinkle with cheese. Broil until cheese is melted and tips of chips are lightly charred, 60 to 90 seconds. Top with remaining green onions, cilantro and lime juice.
