1970s Chicken Casserole
This is a recipe from a 1970s fundraising cookbook, and I loved when Mom made it. The recipe calls for “three chicken breasts,” but in those days there were no deboned chicken breasts, and there never seemed to be very much meat on each of them.
Depending on size, I usually use two, but if they’re small, I do use three, baked and then cut into pieces. I don’t include onions very often simply because I’m too lazy, so I’ll sprinkle it with onion salt or powder. Mix the soup and mayonnaise together separately before folding it all together. The celery should be finely chopped. I used to put cornflake crumbs on top, but life is too short to not use chips, so chips it is.
