Waffles (from Le Cordon Bleu)

 

  • 250 g (8 oz) plain flour
  • 1 tablespoon caster sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 375 ml (12 fl oz) milk or buttermilk
  • 30 g (1 oz) unsalted butter, melted
  • 2 eggs



    Method

    1. Sift together the flour, sugar, baking powder and salt into a large bowl.
    2. In a separate bowl, combine the milk, melted butter and eggs. Gradually add to the flour mixture and mix until well combined.
    3. Preheat a waffle iron according to the manufacturer’s instructions. Once hot, lightly brush with oil. Pour in the recommended amount of batter and cook until golden brown in colour and crispy. Serve with whipped butter and honey or maple syrup.
