Potato, Cauliflower and Spinach Casserole

 


This was pretty tasty, although it took me a very long time to make from start to finish...A couple things I might change for next time:

- Perhaps butter instead of olive oil in the mashed potatoes & cauliflower (which, crazy to say, is a cheaper option these days!); it calls for quite a bit of olive oil, but I think if you have good quality stuff, it would enhance the dish
- Try fresh instead of frozen spinach (although admittedly you would need a lot). The frozen stuff just doesn't quite cut it for me
- Probably more salt or some other kind of seasoning thrown in. The panko I got (4C Japanese style bread crumbs) helped compensate for the lack of seasoning, and I also put on top way more than 1/4 cup of panko crumbs
