Lazy Perogie Casserole

 
This is from Renee Kohlman's vegetable cookbook. I do a bit of variation because I find that the quantities as written don't really layer as suggested (especially depending on what kind of dish you have), and that with all the onions it would be too oniony for my poor stomach. The last time I made it I put the entire cottage cheese layer on the bottom of the pan, topped with noodles, then mashed potatoes which I sprinkled with the cheese interspersed like, then noodles, then potatoes and cheese. And then I put the sauteed onions on top, and dotted a bit of butter on top as well. So the recipe is a good base for doing whatever you need to do to adjust!
