Mango Chicken or Pork Tenderloin Salad with Thai-style vinaigrette
I combined a couple of recipes - I had a small quantity of chicken, and also a pork tenderloin so I marinated them both with the "Peanut and Coconut Chicken Skewers" recipe as is. I really liked the pork tenderloin even more than the chicken, yum yum.
Next, the salad dressing is taken from the Canadian Living recipe, as is.
The salad itself, I did a combination of leaf lettuce, shredded red cabbage, a chopped green onion, chopped cilantro, and chopped peanuts, mango, tossed with the vinaigrette (go easy on the vinaigrette - start with less, taste it, and see if you need more - I found it was best lightly dressed!) and then top with the sliced pork tenderloin or the chicken skewers.
