Cornmeal muffins
This cornmeal muffin recipe is from my recipe notebook I started copying recipes into after China, so around 2026. I would have gotten the recipe in Humboldt, but I don't know what the source is!
I replaced the shortening with butter, because that's what I had at home. You can replace them at a 1:1 ratio.
I also toasted the cornmeal beforehand on a pan in the oven at 350 until it smelled "nutty." Stir it, and keep an eye on it because it can burn quickly.
My kids hate these muffins.
Nohé and I enjoy them.
