No-Bake Energy Bites
This is an "accessible" recipe. That means, if I can do it, you can do it.
Source: my friend Natalie. She brought me these after Cassie was born, and we made some for Joni, and I also made some for Kenza! Very easy and very tasty.
Ingredients

- 1 cup old-fashioned oats
- 2/3 cup toasted shredded coconut (sweetened or unsweetened)
- 1/2 cup creamy peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
- 1/3 cup honey
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
- Stir everything together. Stir all ingredients together in a large mixing bowl until thoroughly combined.
- Chill. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled.
- Roll into balls. Roll into mixture into 1-inch balls.
- Serve. Then enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.
You can also just press the mixture into a square baking dish to make flat energy bars instead of round energy balls.
Notes from da chef (that's me, Leigh): I always double the recipe so I can freeze some. I use this other mix rather than chia seeds - it's got chia seeds in it and some other things that will make you poop smile.
Don't skip the step of chilling it in the fridge before you roll it into balls. It really does help them stick together. I think even just 30 minutes will be good. Then I roll them onto wax paper or parchment paper and put them in the freezer or fridge.
I recommend unsweetened coconut because with the peanut butter (if you are using Kraft) and the honey, they are plenty sweet.
