Fresh Spinach Salad



Dressing:
1 garlic clove, minced
2 tbsp cider or red wine vinegar (I have always used cider vinegar)
1 tsp sugar
1/2 tsp salt
1 tsp dry mustard
1/2 tsp pepper
1/4 cup salad oil

Salad:
8 cups crisp young spinach, stems removed
3 hard-cooked eggs (grated, it says, though I just chop)
8 slices of bacon, cooked and crumbled
4 green onions, chopped
fresh mushrooms, sliced
fresh cauliflower, sliced

For dressing, beat all ingredients together and refrigerate. To make salad, prepare ingredients, toss with dressing just before serving.

  1. I often make this dressing and just put it over whatever salad greens I have, without going to the trouble of making eggs, bacon, etc.
