Swiss Muesli
This is my favourite breakfast to eat at work! I will post the original recipe from Sophie Dahl's cookbook, but then tell you how I would make it to have just one serving.
"Swiss muesli basically sucks up anything in its path. What begins as a rather dry, mean-looking thing, is by morning plump and full of promise."
Serves 2 with enough to save.
4 apples, peeled and cored
2 tbsp lemon juice
2 cups rolled oats
2 cups plain yogurt
1/2 cup of raisins
1/2 cup raspberries
1/4 cup chopped walnuts
honey, or maple syrup to serve
Grate apples coarsely and put in a medium-sized mixing bowl. Pour the lemon juice on top - this stops them browning and adds a welcome degree of tartness to the proceedings.
Mix all other ingredients in and stir with a wooden spoon. I leave it covered overnight in the fridge, so the fruit is plump and swollen and the oats have absorbed the yogurt, and have it the next day for breakfast with some yogurt and a drizzle of honey or syrup.
So for a single portion, which admittedly is still a big breakfast (though I would probably have a bite every 5 minutes and finish it by lunch). 1 apple, sprinkled with lemon juice, probably 1/2 cup oats, 1/2 cup plain yogurt (my favourite is the 90% lactose free Astro plain yogurt), a sprinkle of raisins, sprinkle of walnuts, and I actually leave out the honey because I think the raisins make it quite sweet. Anyway, it is delicious!!
