Tuna Casserole

I wanted to make a tuna casserole with so much flavour, I wouldn't miss the cheese I wasn't going to put in it! I thought Italian inspired, but still with the comfort food flavour of mushroom soup. It was so good, I'll write out the approximate recipe....

1 tbsp olive oil
1/2 red onion, chopped
3 stalks celery, chopped
2/3 cup sundried tomatoes, chopped (if using ones in oil, pat them dry with paper towels)
4 artichokes, from can (not in oil) - chopped
1/2 can white kidney beans (yes)
1/4 tsp "Old Bay" seasoning (or something like bon appetit)
1/8 tsp cayenne pepper
1 tbsp parsley
salt and pepper
1 can chunk tuna
2 tbsp mayo
1 can mushroom soup
macaroni

First, saute the onions in oil. Add celery, cook until soft. Add sundried tomatoes, artichokes, beans, seasonings, salt and pepper, tuna. That's what you see in the first picture.

Stir the mayo and mushroom soup together in a bowl. Stir it into the tuna mixture. Stir in the macaroni. Put into a casserole dish, and heat through in the oven, approximately 20 minutes.
