Veggie Burger
I had great success with this veggie burger! It totally held up on the bbq, was not heavy and brick-like, great texture and flavour. It even got grill marks, as you can see. Whoo! I was doing some internet research on veggie burgers, and this is from someone's blog - she mentions to taste the mix, because if the mix doesn't taste good, the burgers won't. So season to taste. One thing that I think was really successful was the addition of celeriac! I bought one in Humboldt cause I never see them, and it's been sitting in the fridge...maybe since Easter. I thought of grating it into the onions when they were sauteeing. I have no idea what kind of difference this made, I guess, but keep it in mind - it might be worth finely grating a potato or turnip or rutabaga into it the mix. Also, the recipe called for chili powder, and soy sauce, and sunflower seeds. I left these out cause I was looking for a more Amigos burger taste, but i'm sure they'd be good - maybe next time. For sure the sunflower seeds, maybe half chopped, would be something to try.
1/2 cup onion, diced
1 garlic clove, minced
1 cup grated carrots (I used half of this as celeriac - as i mention in the intro)
1 cup beans - Heinz "chili style" kidney beans (definitely go for a seasoned one in this case, the more flavour the better!)
1 cup regular oats, processed to a flour in a food processor
1.5 cups bread crumbs (just use about 2 pieces of bread, in a food processor)
1/3 cup almonds, chopped (put them in food processor, but make sure they don't turn into a paste)
Heaping 1/4 cup dried parsley
1 tsp cumin
1.5 tsp oregano
1/2 tsp Old Bay seasoning (or other kind of seasoning)
1/4 tsp coriander
1 egg
salt and pepper
Saute onions and garlic in about 1/2 tbsp olive oil. Grate the carrot and other root vegetable, if using, into the onions near the end.
Roughly mash the beans.
In bowl, add crumbs, oats, almonds, onion/garlic/carrot mix, beans, seasonings. Stir well, and taste - add more seasoning if you feel it needs it. Lightly beat the egg and add to mix - form into patties (I got 6).
If you make them on the bbq, make sure to grease the grill. They'll take approximately 5 minutes per side, with the lid closed. On a frying pan you would do the same. You could also bake them in the oven.
