Strawberry Vinegar

1 lb strawberries, trimmed (3 cups)
2 tbsp sugar, if berries are not sweet
2 cups balsamic vinegar (white, if available)

Pulse berries with sugar (if using) in food processor until finely chopped and very juicy. Transfer to a bowl and add vinegar. Let stand 1 hour. Strain vinegar through a fine mesh sieve into a bowl, discarding solids.
Vinegar keeps, chilled, 1 week (I think you could stretch that...)

It makes a lot so really if it only lasts 1 week that's ridiculous because it is essentially an entire bottle of balsamic vinegar. So I would cut the recipe in half.
