Baked Spinach and Artichoke Dip
This is the dip I made for the Oscar Party. I combined a couple of recipes to come up with this one:
- 1 tbsp olive oil
- 1 bag baby spinach
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 8oz package cream cheese, room temperature
- 1 (14 ounce) jar artichokes, drained and chopped (packed in oil)
- 3 garlic cloves (2 would have been fine)
- pinch cayenne (I could have used more)
- a few dashes of Worcestersire Sauce
- 1/2 cup grated Parmesan cheese
- salt and pepper, to taste
- parsley for garnish
Preparation:
Preheat oven to 375 degrees F. Grease small baking dish. (I used a pie plate because I didn't have an oval-shaped dish that could go in the oven)
Heat large saute pan in olive oil over medium heat. When olive oil is hot, add spinach and saute until it just begins to wilt. Remove from heat. Let cool. Chop and squeeze dry.
Add cream cheese, mayonnaise and sour cream to a large bowl. Beat with electric beaters until smooth. Stir in artichokes, spinach, Parmesan cheese, garlic, cayenne, Worcestersire sauce, and salt and pepper.
Transfer to baking dish. Sprinkle with Parmesan cheese on top. Bake dip until bubbly and hot and lightly golden brown on top, about 15-20 minutes.
Garnish with chopped parsley and serve with toasted baguette slices (I had nacho chips and crackers).
