Parmesan Stuffed Dates wrapped in Bacon
"Each bite delivers a huge range of tastes - sweet, salty and smoky - all at the same time." A couple of notes: I see they actually call for the oven to be at 450 degrees. I think I had them at 350 which was too low because it takes longer for the bacon to cook but the dates are getting dark. If you can find Medjool dates which are bigger and more jammy and soft go with those - they're more expensive but could probably take the heat a bit better. However, if you really do 450 for the time they suggest it should be fine.
Also, this is the recipe, but just cut some parmesan into pieces, put it into the inside of the dates, wrap them in a little piece of bacon, and stick them with a toothpick so the bacon doesn't fall off or something.
18 sticks Parmigiano-Reggiano (I used Grana Padano, for the record - cut the parmesan into little pieces)
18 pitted dates (preferably Medjool)
6 bacon slices, cut crosswise into thirds
Put oven rack in middle and preheat oven to 450.
Soak the toothpicks in water so they don't start on fire in the oven.
Stuff 1 piece of cheese into each date, wrap backon around each date, securing it with a pick. Arrange dates 1 inch apart in a shallow baking pan. Bake 5 min, then turn with tongs and bake until bacon is criisp, about 5 to 6 min more.
