Classic Lemonade

The base:

1/2 cup lemon juice (depends on the size — last time I made it I used three good-sized lemons)

1/2 cup sugar

Stir these together in a small pitcher until the sugar dissolves.

Add 2 cups of water and fill with ice. Makes 2 2/3 cups without ice.

The upgrades:

Sparkling lemonade: substitute club soda for water

Shandy: pour equal parts lemonade and cold Corona (i've been using any beer) into a glass

Citrus Sangria: pour equal parts lemonade and dry white wine into a pitcher. Stir in a mix of frozen fruit such as peaches and pineapple.

Lemonade Iced Tea: omit water. Brew two orange pekoe tea bags in 2 cups boiling water. Let steep for 5 minutes. Discard tea bags. Pour into pitcher along with lemon-sugar mixture, handfuls of ice and fresh mint.

Mum's note: I've been mixing half lemon juice, half sugar and keeping it in the fridge without adding water — so it's syrupy. I put slightly less than 1/4 cup in a large glass and add cold club soda for a great drink. I've also been doing the same thing with beer. It's really good! Haven't tried the sangria or iced tea.
