Jerk Pork Chops
These were awesome!!! You could bbq pork tenderloin or do porkchops.
3 scallions, trimmed and cut into 2" pieces
1 tbsp chopped fresh thyme (I just used dried)
2 tsp kosher salt
1/2 tsp ground allspice
1/4 teaspoon freshly ground pepper
2 tbsp fresh lime juice
1 tbsp molasses
1 tsp Scotch bonnet or habanero pepper sauce (or tabasco if you don't have anything like that)
Combine everything in a blender until smooth (honestly I just chopped the scallions finely and didn't feel the need to put it all in a blender). Put pork in a glass or ceramic baking dish and rub all over with scallion marinade (or just put all those ingredients in a ziploc bag with the pork). Marinate for about 8 hours. THEN BBQ.
