Hamburger Cupcakes from SGI cookbook


1 lb ground beef
1 can mushroom soup
1/4 cup chopped onion
1 egg, beaten
1/2 grated cheddar cheese
1/2 cup breadcrumbs
salt to taste
pepper to taste
other seasonings, to taste
16-18 slices bread, buttered

Combine all ingredients except bread, mix well. Trim ends from buttered bread slices. Press slices, buttered side down, into muffin tins. Fill full with meat mixture and bake at 350 for 40 minutes. Note: these freeze well and are good in cold lunches.

Oh my gosh these were so good - the bread was just strangely so delicious. I didn't have a can of mushroom soup, but had some mushrooms so I made an ad hoc version of mushroom soup, sauteed mushrooms with some cream and milk and salt and pepper.
