Curried Chicken and Mango Sandwiches
6 cups cooked chicken
4 green onions
3 celery stalks
1 mango
cilantro (if you want)
1/2 cup chopped almonds
1/2 cup plain yogurt or mayo
1 tbsp honey
1 tsp curry powder
1/2 tsp cumin
1/2 tsp salt
pepper
I had about 3 cups chopped chicken, but kept the rest of the ingredients pretty much the same (and used mayo, not yogurt). I served it in homemade buns for the picnic and really liked it! I don't know where the recipe came from, I found it written on a piece of paper in one of my scrapbooks.
