Texas-Style Barbecue Sauce

1/2 cup packed light brown sugar
1/2 cup cider vinegar
1 tablespoon chopped drained pickled green chilies (optional)
1 1/2 teaspoon dry mustard
1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper

n small bowl, whisk together brown sugar, vinegar, chilies (if using), mustard, paprika, salt, cumin and cayenne pepper. Let stand for 15 minutes.

Makes about 1 cup.

CHANGE IT UP: Thick Texas-Style Barbecue Sauce: Stir in 1/2 cup ketchup after letting stand.
