Banana Buttermilk Pancakes

At Leigh's request - from Nigella Lawson "Feast". She says they don't taste very "bananary" and says that all you have to do is "tip" everything into the blender.

1 very ripe banana
150g plain flour
1 tsp baking powder
1/2 tsp baking soda
1 egg
250ml buttermilk
1 tsp sugar
30g butter, melted

Put all the ingredients except for the melted butter into a blender and liquidize to a smooth batter. Alternatively, you can put the flour, bpowder and bsoda into a bowl and whisk the egg, buttermilk and sugar in a jug. Pour the wet ingredients over the dry, and now mash the banana and fold that in.

Whiever method you've used, pour the batter into a jug and leave til you want to use it. Stir in the melted butter just before you set about frying the pancakes.

On a heated smooth griddle or non-stick, dollop tablespoons of batter to form 8cm cakes, flipping them over once the underside is set, a minute if that, by which time it will also have turned a deep golden brown. Half a minute or so on the other side should do it, and transfer as you go to a warmed waiting plate or plates. I eat these sprinkled with pumpkin seeds and drenched in honey. (the "I" being Nigella).
