Chicken fettuccini alfredo
INGREDIENTS
- 1 pound chicken
- Coarse salt
- Ground white pepper
- 2 tablespoons unsalted butter
- 2 cups heavy cream
- 4 cloves garlic, peeled
- 3/4 cup grated Parmesan cheese, plus more for serving
- 1 pound fettucine
- DIRECTIONS
- Cut chicken in strips. Season with salt and white pepper and saute in butter. Meanwhile in a separate pot, simmer garlic cloves in cream for 10 minutes.
- Pour cream into pan with chicken, removing garlic cloves. Stir in Parmesan. Cook pasta according to package instructions.
- Toss pasta with sauce and serve with extra Parmesan.
Leigh's notes:
This was soo good! Nohé loved it and asked that I add it to our regular recipes, if I can find a way to make it less...rich. I used whipping cream but I'm sure even 10% would work.
I used two chicken breasts and also steamed broccoli on the side and added it to the mixture in the end. I added parsley too but then decided that I hate parsley.
I added salt and pepper to the sauce while I was making it and recommend doing this. I cut the 4 garlic cloves in half to let out extra flavour but I think next time I would even mince one of the cloves.
