Oatmeal Seed Cookies
This recipe was posted on the Crocus & Ivy Facebook page this morning, so I decided to try them. This is what they say: "This is a healthier alternative to plain chocolate chip - has lots of fibre, but still is a great tasting cookie." I agree — they're satisfyingly crunchy but with a soft centre.
1/2 c. butter
1/2 c. sugar
1/2 cup firmly packed brown sugar
1 egg
1 tsp vanilla extract
1 cup large flake rolled oats
1 cup flour (they suggest nutri flour, or you could use 1/2 all purpose flour and 1/2 whole wheat, but I used plain flour)
1 tsp baking soda
1/2 tsp salt
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
3 tbsp flax seeds
chocolate chips (as many as you like - I used a little over 1/3 cup)
Mix together butter, sugar, b. sugar, egg and vanilla. Add in the oats, mix, add the flour and b.soda and salt, mix, add in the rest.
These cookies are good without the chocolate chips (apparently the original recipe did not have them in, but they seem to need chocolate chips)
Bake at 350 until lightly browned on top - about 8-10 minutes, depending on your oven.
