Plum and Date Squares
This is a variation on a Homemakers recipe - between a square and a crumble or crisp. I was trying to use up plums I had, but didn't have enough for the homemakers recipe, so I made a hybrid. But it was very delicious, so if anyone tries it let me know how it turned out. I know, though, that plums and dates aren't anyone's first choice.
1 cup oats
1/2 cup flour
1/3 cup brown sugar
1/3 cup flaked almonds
pinch nutmeg, cinnamon (to your taste)
1/3 cup butter, melted
3 cups sliced "Italian" plums (the small prune ones)
1.5 cups chopped dates
1/3 cup orange juice
2 tbsp honey
1 tbsp lemon juice
Combine top ingredients - drizzle over the melted butter as you stir, so that it comes together in a crumbly way.
In saucepan, add the dates and orange juice (or you could use water if you don't have orange juice). Heat it up so that the dates are softened, but not mushy. Add to the plums in a bowl. Stir in the honey, and lemon juice. Add a dash of cinnamon, nutmeg. Stir in about 1 tbsp flour.
Put enough of the crumble to just cover the bottom of your pan (a bread loaf pan works well for this size of recipe) - put the filling in, and cover with the rest of the topping. Bake until it's done!
