Red Lentil and White Bean Soup
Kalon liked this one - the recipe calls for bacon, they said to cook the bacon with thyme so you would have crispy thymey bacon as a garnish.
2 tbsp olive oil
1 red onion, chopped
3 garlic cloves, crushed
1 tsp thyme
1/4 tsp hot pepper flakes
salt and pepper
1 cup red lentils
1 28 oz can crushed tomatoes
4 cups chicken stock
1 can white beans (cannellini beans or white kidney beans - I had navy beans)
Heat the oil - cook onion, garlic, etc. Add the lentils, crushed tomatoes and stock. Bring to boil and reduce heat, simmer 20 minutes. Add the beans, cook about 2 minutes more. Top with parmesan cheese - or better yet, serve with little parmesan toasts!!
