Salmon Aux Lentilles redux

The original recipe is great but! You can do a quick version. I had to use up the salmon in the fridge, and Kalon and I were going to watch a movie, and I wanted to have something for lunch the next day. 

butter
leeks
grainy mustard
lemon juice
white wine
1 cup green lentils
3 cups water

Butter a little casserole dish or some kind of little pan where everything can be cosy together. Slice leeks (I didn't even chop them - just long slices). Scatter in the buttered pan. Pour in some wine - maybe 3 tbsp? Lay the salmon over top. Season the salmon. I made a butter mixture with grainy mustard, and spread it over top of the salmon. Cover with tin foil, and put in the oven on low heat - about 300. This smelled amazing.

Cook lentils in the water, seasoned with about 3/4 cup salt, 25 minutes. Drain. Stir in some butter, lemon juice, grainy mustard.

When the salmon is done, add the winey juice at the bottom of the pan to the lentils. The leeks are delicious and soft and it was a really good lunch. Yum yum.
