Whole Wheat Pasta with Peppers, Tomatoes and Olives
This is so good! And you can just use what you have - I only had about 1 and a half peppers, and instead of the chopped tomatoes I used some leftover tomato paste - about half a can. Which I might actually recommend instead of the chopped tomatoes.
Also I have never bought marjoram, but don't let that hold you back! Thyme works great.
The whole wheat pasta is actually really good with it, and I'm not usually inclined to say so.

2 tbsp olive oil
3 sweet red yellow and/or orange peppers thinly sliced
1 small onion thinly sliced
2 cloves garlic, minced
1 tsp dried marjoram or thyme
1/4 tsp salt
1/4 tsp pepper
pinch hot pepper flakes
2 plum tomatoes diced OR half a can of tomato paste
1/4 cup black olives, halved
2 tbsp cider or white wine vinegar
8 oz whole wheat spaghetti
1/4 cup chopped fresh parsley
In large skillet, heat oil - cook sweet peppers, onions, garlic, thyme, salt pepper and hot pepper flakes until quite tender. Add tomatoes, olives and vinegar, cook, stirring, until heated through.
Meanwhile cook pasta in salted water.
Add pepper mixture and parsley to pot - use some reserved cooking water to moisten if needed.
