Baked Apples with Dried Fruit and Whipped Cream

On October 17th, 2010, Mom wrote about this to all of us, including Mary Ann! I agree that it is absolutely amazing, I made it once too.

Hey,

I have just finished the most incredibly fantastic dessert. Baked Apples with Dried Fruit and Maple Whipped Cream.

1 cup apple cider (in the fruits and vegetables section)
1/4 cup packed brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tbsp butter
 4 baking apples (golden delicious)
1/2 cup mixed, dried fruit (I bought a medley of prunes, apricots, apples, peaches and just picked out the apricots, peaches and apricots, put them into my teeny food chopper and chopped them up -- raisins would be good too, but I didn't have any).

Maple Whipped Cream:

1/2 cup whipping cream
2 tbsp maple syrup

In small saucepan bring cider, sugar, cinnamon and nutmeg to boil; stir in butter. Set aside.

Core apples almost to bottom, leaving base intact. Pare off 3/4 inch wide strip around core at top; trim base to level if needed. Stuff dried fruit into each apple cavity (I stuffed them quite full -- i had more than 1/2 cup). Place in 8-inch square glass baking dish; put cider mixture over top.

Bake, covered (with foil) in 375 degree oven until tender, about 45 minutes. Uncover and bake until sauce is syrupy, about 20 minutes. MINE DID NOT GET SYRUPY!

Whip cream with maple syrup and spoon over apples.

You could just have plain whipped cream. But, oh, my god -- this was absolutely divine and tasted like CHRISTMAS.

  1. I have made this today, Sunday, March 25, even though it's sunny out and this dessert is for cloudy days.
