Banana Bread
2.5 cups flour
2 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1/4 cup wheat germ
1/2 cup unsalted butter, softened
3/4 cup brown sugar
3/4 cup white sugar
4 eggs
3 rip bananas
1/4 cup sour cream
3/4 cup walnuts, chopped
Preheat oven to 350. Butter and flour a 9x5 loaf pan. Combine flour, wheat germ, baking soda, baking powder and salt in a small bowl. In large bowl, cream butter and sugars. Blend in eggs one at a time until well incorporated. Mash together bananas and sour cream. Ad 1/3 of the flour mixture to butter mixture then stir in bananas. Add remainder of flour. Don't overmix. Fold in walnuts. Bake one hour. Cool in pan 10 minutes, then transfer to rack.
