Cheddar Green Onion Biscuits
Leigh said: These biscuits were really good with the soup, except I hate anything involving flouring a countertop. It made 24 so we kept half and froze the other 12 for next time we make soup. That time will be better, because I won't have to flour a countertop.
Ingredients
- 2-1/4 cups (550 mL) all-purpose flour
- 1 tbsp (15 mL) baking powder
- 3/4 tsp (4 mL) salt
- 1/4 tsp (1 mL) cayenne pepper
- 2/3 cup (150 mL) cold unsalted butter, cubed
- 1 cup (250 mL) shredded old cheddar cheese
- 3 green onions, thinly sliced
- 1 egg
- 1 cup (250 mL) buttermilk
- Glaze:
- 2 tbsp (30 mL) buttermilk
Preparation
In bowl, whisk together flour, baking powder, salt and cayenne pepper. With pastry blender, 2 knives or fingertips, cut in butter until in crumbs. Stir in cheese and green onions.
Whisk egg with buttermilk; pour over dry ingredients and combine to form sticky mass. Turn out onto floured surface; knead lightly 4 or 5 times. Roll out to 3/4-inch (2 cm) thickness. With 2-1/4-inch (5.5 cm) round cutter, cut out shapes, rerolling scraps. Place on parchment paper–lined or greased baking sheet.
Glaze: Brush tops with buttermilk. Bake in 425°F (220°C) oven until golden, about 20 minutes.
