Cheesecake in a Glass
Cheesecake in a Glass (from Nigella Lawson)1/2 pound strawberries -- a bunch
1 tsp sugar
vanilla wafer cookies
half of an 8 oz light cream cheese
2 tbsp icing sugar
1/2 cup whipping cream
1 tbsp lemon juice
1/2 tsp vanilla extract
small glasses
Cut up the strawberries, put into bowl and sprinkle with the 1 tsp sugar, mix and cover with plastic wrap.
Crush the cookies until crumby.
Measure the cream cheese and icing sugar into bowl and beat. Add the cream, lemon juice and vanilla, and combine gently (I was not gentle).
Divide the cookie crumbs equally among four glasses (I made only two, and didn't use it all) (she recommends martini glasses). Spoon cream cheese mixture on top, dividing equally and covering the cookie crumbs. Divide the strawberries, spooning them on top. Can be eaten right away, or chilled while you're eating supper!
