Blueberry Bran Muffins
This is my first post on the blog! Now that I'm living on my own again I've been cooking/baking some more. Here is a recipe for Blueberry Bran Muffins. Cole's mom had some at her house, and they were amazing, so she gave me the recipe. Mine, however, were fine, but not as good as hers. This recipe is HUGE, and I would NEVER put that much oil in again. It's insane how oily they are!! I feel like I've just dunked my muffin oil before eating it. So yeah, I would just go for 1 cup instead of 1.5 cups. Here is the recipe, word for word. It's kind of strange, like the yogourt measurements and stuff.
Mix Together:
1 large blueberry, regular yogourt (750g)
1 small individual yogourt (100g)
3 tsp baking soda
In a large bowl mix together:
3xl eggs
2 cups brown sugar
1.5 cups oil
3 cups bran
3 tsp vanilla
3/4 tsp salt
In a medium bowl mix together:
3 cups flower
6 tsp baking powder
3 cups blueberries or saskatoon berries
Alternate wet and dry ingredients into the egg mixture. Stir in blueberries.
Bake at 400, 25 to 30 min. Makes 24 large muffins. (MY BATCH MADE 39!!!)
