Potato Soup from Bredenbury Cookbook

This soup was delicious! It's from a minor hockey fundraising cookbook that Cole's mom gave me. I forgot to take a picture before I put crackers in so it doesn't look that good :P

Potato Soup

3 tsp margarine
1 large onion, sliced
1/2 cup thinly sliced carrot
1/2 cup diced celery
1 clove garlic, minced
4 cups diced potato
2 cups chicken stock
1.5 tsp salt
1/4 tsp pepper
1 tsp parsley flakes
2 cups milk
1/2 cup grated cheddar cheese

Put first five ingredients into large saucepan. Saute vegetables until onion is clear. Add potato, chicken stock, salt, pepper and parsley. Bring to a boil. Cover and simmer slowly until vegetables are cooked. Stir occasionally. Stir in milk. Heat without boiling. Garnish with cheddar cheese.

I added a small jalapeno and it gave it some extra bite! I also forgot about the cheese but that's not really necessary. I also added a teeny bit more chicken stock and milk than it called for to have more liquid. Yummy!

  1. Beware - jalapenos get MUCH hotter as they get older! I made a variation of this soup last night and used a small jalapeno and it could almost not be eaten because it was so hot!
