Rhubarb Banana Crumble
This is so good! It's kind of weird because you don't usually make things with bananas, but the combination is really delicious. Unfortunately I didn't have either walnuts or pine nuts, but I bet they would have been good, and I bet it would be delicious with ice cream!
5 cups sliced fresh rhubarb, or frozen rhubarb thawed and drained
1/3 cup granulated sugar
2 tbsp all-purpose flour
3 bananas chopped
3/4 quick cooking rolled oats (I used regular)
1/3 cup all-purpose flour
1/4 granulated sugar
1/4 cup packed brown sugar
1/4 tsp cinnamon
1/3 cup cold unsalted, cubed
1/4 cup walnut pieces
1/4 cup pine nuts (optional)
Toss together rhubarb, sugar and flour, divide among 8 greased individual ramekins or pour into an 8-inch glass baking. Cover with foil; bake in 400 oven, stirring once, until tender-crips, about 25 minutes. Arrange bananas over top.
Meanwhile combine oats, flour, granualted sugar, brown sugar and cinnamon; with fingers, blend in butter until crumbly. Mix in walnuts, and pine nuts. Scatter over bananas, pressing gently.
Bake, uncovered in 350 oven until bubbly and crumble is golden, about 25 minutes.

ReplyDeleteI keep wanting to make something with rhubarb but I can't FIND it anywhere! What can I do? Also, my cat keeps doing what I can only describe as a "choo-choo" across the carpet. What gives?
